Cook: Rock Cakes

With Summer attempting to make an appearance I had planned to make the most of it and be in the garden with a blackcurrant and elderflower Pimms.  However I couldn't find a bottle in the supermarket so instead  I thought I would spend some time documenting a family favourite recipe.  There is nothing particularly summery about Rock Cakes but whenever I make a batch of these golden goodies it never fails to make the family happy.

Here's what you need:

2 cups (250g) self raising flour sifted 
90g butter cubed
1/2 cup (125g) caster sugar
1/2 cup (95g) mixed dried fruit
1 tablespoon chopped mixed nuts
1/2 teaspoon ground ginger
1 egg
3 tablespoons milk



Pre heat oven to 200 degrees C.  Place the flour in a large bowl and rub in the butter with your fingertips until fine and crumbly. 
Fine and crumbly. 

Then add the caster sugar....

Dried fruit....

Chopped nuts....

And ginger

Mix the dry ingredients together.
Then whisk the egg and milk and add to the mixture.

Mix it all together until it forms a stiff dough.

Then take small balled heaps and place on greased or lined baking tray.


Place in the oven for 15-20 mins or until golden brown.

Once cooked place on a wire rack to cool.

 Then enjoy.. You can serve buttered if you wish but my favourite is with a nice cup of tea.

In fact these are so good you could serve them with afternoon tea on the lawn.  Maybe they are summery after all.....bring out the bunting!
